Ingredients
For the Cake:
- 6 eggs
- 180g granulated sugar
- 170g cake flour
- 40g cocoa powder
- 50g sugar (for syrup)
- 100g water (for syrup)
- 1 tsp Cointreau (or orange liqueur)
- 60g milk
- 60g butter
For the Filling & Frosting:
- Dark chocolate (use DLA or your preferred brand)
Instructions
Step 1: Prepare the Milk-Butter Mixture & Syrup
In a heatproof bowl, combine the butter and milk. Gently warm over a water bath at 50ºC until melted and smooth.
In a small saucepan, combine 50g sugar, 100g water, and 1 tsp Cointreau. Bring to a boil to make a simple syrup. Once boiled, remove from heat and let cool completely.
Step 2: Make the Cocoa Génoise
Sift together the cake flour and cocoa powder, then set aside.
In a separate heatproof bowl, add the eggs and 180g sugar. Place the bowl over a water bath and gently heat to 40ºC, whisking continuously until the mixture becomes pale and fluffy.
Step 3: Combine Ingredients and Bake
Gently fold the sifted dry ingredients into the egg mixture using a rubber spatula. Add the warmed butter-milk mixture and mix until fully incorporated.
Divide the batter into two equal portions and pour into prepared round cake pans lined with parchment paper. Bake in a preheated oven at 170ºC (338ºF) for about 35 minutes, or until a skewer comes out clean.
Step 4: Cool and Assemble
Once baked, remove the cakes from the pans and peel off the parchment paper. Allow to cool completely on a wire rack.
When cooled, slice each cake in half horizontally (if needed) to create layers. Generously brush the syrup over each layer to keep the cake moist and flavorful.
Step 5: Fill and Frost
Spread a generous layer of dark chocolate filling between the cake layers. Use the remaining chocolate to coat the outside of the cake, smoothing it into a rich, glossy finish.
